Homemade Grape Tomato Ketchup

The Inspiration of Urb’n’Spice Series

One of my most vivid childhood food memories is the aroma in my house when my Mom made ketchup from the bumper crop of tomatoes we always grew in our large backyard garden. The indescribable scent both piquant and zesty wafted throughout the house drawing everyone into the kitchen to peek into the bubbling pot. While I no longer have the large garden of my childhood, I am lucky enough to live in a wonderful part of Canada where fresh produce is easily accessible. The recipe I have provided below for Homemade Grape Tomato Ketchup is easy to make and a great project for you to try when tomatoes are plentiful.   Once you have tasted your own homemade ketchup, you may never go back to store-bought again. I have used grape tomatoes in this recipe – their sweetness and flavour lend themselves well to making this popular condiment.   Any tomato variety can be used for this recipe (see the proportions below), and even a mixture of fresh and canned tomatoes work well. Dressed Up Sour Cream

This simple recipe was inspired by All-Dressed chips.  I like the rounded blend of spices in that addictive snack.  I followed the same idea in creating this recipe for Dressed Up Sour Cream, combining a few pantry items with the addition of fresh or dried herbs. I serve this delicious mixture with so many things: baked potatoes, potato chips, appetizers and snacks such as Game Day Savoury Potato Wedges and Parmesan Pita Crisps and Dry Roasted Crispy Chicken Wings with Honey Garlic Dip.

We were experiencing a rather dampish day with brisk winds on Vancouver Island, and it seemed that an oven meal was appropriate. Luckily, the Market Inspiration of the Day was a boneless turkey thigh.  You may have seen this particular turkey cut in your market wanderings and wondered what to do with it.  I am going to share an idea with you for Roasted Turkey Thighs with Honey Dijon Glaze.  But first, let’s mix up a quick poultry dry rub seasoning mix. UrbnSpice Holiday Treats Preserve

Holiday Treats Preserve – this preserve is also known as Cranberry, Pineapple and Pear Compote.

This is not your ordinary cranberry sauce.  This has been a must-have preserve in our family for decades and it is enjoyed year around. This incredible blend of cranberry, pineapple and pear are perfectly balanced together with special cranberry molasses.  The Holiday Treats Preserve is amazing with any poultry or pork (and don’t forget turkey dinners!). It is amazing in a chicken Panini, too.  No other cranberry sauce will do.  We use it all year around for all of our pork and poultry dishes.

It is spread onto slices of bread for turkey or chicken sandwiches or served alongside pork and ham feasts just as easily. It is a treat to be sure – “Holiday Treats Preserve“.Holiday Treats Preserve | urbnspice.com

 

Here are just a few of the ways that you can use this delicious preserve:

On a Wats-On Sandwich

  • The almost famous “Wats-On Chicken Sandwich” in which a layer of the caramelized onion is crucial.  The layers of this beautiful sandwich are as follows:  caramelized onion, grilled chicken, provolone cheese, fresh basil leaves, tomato slices, garlic aïoli (or the Caramelized Onion Dip) on a buttered, toasted baguette.  Serve with Holiday Treats Preserve.  So, so good!
