Cinnamon Rolls with Vanilla

What do you think of when Cinnamon Rolls are mentioned?  Does it create food memories of cinnamon-spice gooey sticky buns or cinnamon pinwheels with a cream cheese glaze?  Does it make your mouth water when the fragrance of cinnamon buns are wafting through the kitchen while they are baking in the oven?  Can you wait even five minutes before you twist off a bit off of one corner of a freshly baked hot-out-of-the-oven cinnamon roll? That is familiar to me on all accounts.

And, if you are anything like me, a cinnamon roll feast is something that we seldom make now at home unless there is a special function where a large quantity is required.  Then, I remember why I loved making cinnamon rolls so much. There is just something about working with a really nice dough that is just so satisfying.

Do you know the difference between cinnamon rolls and cinnamon buns?  I wonder about things like that.  Actually, there really is no difference at all. The terms cinnamon rolls and cinnamon buns are often used interchangeably. There are certainly many different ways of making cinnamon rolls.  Do you prefer the buns baked tightly together on one tray or individually baked in muffin tins?  Do you like the cinnamon rolls individually baked free form or each contained in a pretty pan?  Do you go off the beaten path and create something a little unconventional like a twisted cinnamon ring or chop the cinnamon roll dough to create an interesting effect?

It does not really matter how you decide to bake them – what really matters is the quality of the ingredients that you use.  I am quite fussy about the butter and eggs, of course, but what is really important for this baked good is the quality of the cinnamon.  The cinnamon that I prefer is either Ceylon or Korintje variety from The Vanilla Food Company – the quality of their cinnamon is unsurpassed.

This recipe was made for Easter breakfast when my two daughters were very young, and it has been a favourite ever since. Sweet Potato Pancakes (Gluten Free)

Pancakes are definitely a comfort food, aren’t they?  I have experimented with different varieties and Sweet Potato Pancakes have become a favourite. Lately, pancakes in our house often mean certain dietary restrictions are considered, depending on who I am making them for. When grandchildren are visiting, I will often add a scoopful of protein powder (age appropriate ) and quinoa flakes to give them a running start. When their Daddy or Mommy are visiting, the recipe gets changed again to accommodate dairy free and grain free restrictions.

The little ones told me yesterday that they had run out of my pancakes, so I had better get busy again making a batch and freezing them to reheat. They make a quick and easy breakfast served with fresh berries and a fruit syrup.

Good Morning Cranberry-Coconut and Carrot Gluten Free Muffins

This recipe for Good Morning Cranberry-Coconut and Carrot Gluten-Free Muffins is bar none, one of the best gluten-free muffins, if not the best gluten free breakfast pastry I have ever tasted.  It is the closest thing to a Morning Glory Muffin that I can think of.  In my career as a pastry chef, I have made a ton of muffins for breakfast service and various morning events.   I mean A LOT of muffins!  I challenged myself to make a gluten-free muffin that no-one could differentiate from a gluten muffin.  I believe I have done that with this gem of a recipe.  The feedback that I receive from anyone who has tasted this muffin verifies my findings.  Try it!  Let me know what you think – I would love your feedback.

Belly Buttons – A pastry story

Belly Buttons – it is not what you think.  In the Urbnspice kitchen, Belly Buttons are a family pastry story.  Growing up as the only French Canadian family in an Irish community in Ontario, my mom was known far and wide in the tiny village as a great cook and baker. There would always be delicious homemade treats for visiting family, neighbours and friends. Looking back, I am sure it was not easy keeping the pantry and cookie tin full of homemade goodies with five children and the tag-alongs that always seemed to gather around the large front veranda. My Mom also worked six days a week outside of the home, which was unusual in that day.  I am not sure how she did it.  She has always made the deepest impact on my culinary path.

Belly Buttons – A family pastry story 

On Sundays, I remember spending time at my mother’s side watching her prepare these delectable items while she sang her little ditties. Homemade pies were often part of our family gatherings.She skillfully rolled out the dough, filled and topped pies with the efficiency of an experienced baker. She made it look so easy!

The best part was waiting until she had finished, and there would always be dough remaining from the scraps and cuttings that could be gathered up and made into our favourite pastry – ‘bellybuttons’!

Not many of my friends had ever heard of a pastry called a ‘belly-button’. However, once they tried one, it quickly became one of their favourites, too….
