It is almost Super Bowl weekend! That means snacks – lots of snacks. It also means we will need a snack that can be easily and neatly munched on in front of the big screen without taking our eyes off the action. We have made these Game Day Savoury Potato Wedges for just about every occasion from birthdays to barbeques. Our favourite way to enjoy them is on a large wooden platter served family style with Dressed Up Sour Cream and of course, ketchup.
Savoury Potato Wedge Seasoning Blend
Seasoning Blend Yield: 130 g seasoning mix, (enough for 7 batches of potato wedges)
INGREDIENTS:
- 2 tablespoons onion powder (24 g)
- 1 tablespoons onion salt (21 g)
- 2 tablespoons garlic powder (21 g)
- 2 tablespoons garlic salt (28 g)
- 2 tablespoons paprika (10 g)
- 1 tablespoon fine sea salt (15 g)
- 2 teaspoons coarse ground black pepper
- 1 tablespoon dried basil flakes (1 g)
- 1 tablespoon dried oregano flakes (3 g)
- 1 tablespoon dried rosemary, crumbled finely (2 g)
- 1 tablespoon thyme (3 g)
- 2 tablespoons dried parsley flakes (3 g)

- 4 large russet or yellow flesh potatoes (2 lbs.)
- 2 tablespoons olive oil
METHOD:
- Preheat the oven to 425oF (400oF convection).
- For the seasoning mix: In a medium bowl, combine all of the seasoning mix ingredients together and mix well. Place the seasoning mix in a tightly covered container (you will use 2 tablespoons of seasoning mix for each batch of four potatoes).
- For the Game Day Savoury Potato Wedges: Scrub the potatoes well (do not peel). Dry the potatoes with a paper towel.
- Cut each potato in half lengthwise. Cut each half into four wedges lengthwise. Repeat with the other potato half (eight wedges per potato). Place the wedges in a large bowl. Do the same with the remaining potatoes.
- Add 2 tablespoons (30 ml) of olive oil and 2 tablespoons (20 g) of the Seasoning Mix to the potatoes.
- Toss the potatoes well in the oil and seasoning mix.
- Place the potato wedges on a parchment lined baking sheet upright (peeling side down), as shown in the photograph.
- Bake in the preheated oven for 30 minutes or until the potato wedges are golden and cooked through. CHEF TIP: Leave the potatoes upright without turning for the best result.
- Serve with Dressed Up Sour Cream and ketchup.

First, make the Savoury Potato Wedge Seasoning Blend

Use 2 Tablespoons of Savoury Seasoning Mix for four large potatoes

Scrub large russet or yellow-fleshed potatoes without peeling

Four large russet potatoes are cut into 32 wedges

Toss the potato wedges with olive oil and seasoning mix

The potatoes are placed upright onto a parchment lined baking sheet

The potato wedges are baked for 30 minutes until golden

The potato wedges are ready for snacking and served with ketchup and Dressed Up Sour Cream
