The double pie crust is pinched together to form a pretty edge | urbnspice.com

The thumb and index fingers of one hand rest against the side of the pie crust while the index finger of the other hand pushes the dough into them to form a scallop edge all around the pie crust. This seals the two crusts together and also helps keep the juices in the pie.
