How to Prepare Spatchcock Chicken

Urb’n’Spice Tips and Techniques Series

Chicken is one of the most versatile of all meats or poultry.  It is prepared in a variety of ways in the Urb’n’Spice kitchen, such as Herb and Butter Sunday Roast Chicken, Pan Roasted Chicken with Creamy Asiago Sauce, or Grilled Chicken Breast with Roasted Strawberry Salsa.  The opportunity to flavour chicken is limitless.  In this post, I will teach you How to Prepare a Spatchcock Chicken, and also show you how to make a Quick Poultry Rub that will give any poultry dish a delicious flavour.

A Spatchcock Chicken is essentially a chicken that has had the backbone removed.  This allows you to butterfly or flatten the chicken more easily for grilling or roasting. Removing the backbone can be done with a sharp pair of kitchen utility shears or a chef’s (French) knife – not a serrated knife.  Alternatively, your butcher can easily remove the backbone for you. Once you have mastered the spatchcock technique, you will be able to create a delicious meal in the oven or on the grill in a much shorter time than roasting a whole chicken.

Chicken, Millet and Spinach Appetizers

We all have a repertoire of appetizers that we make year after year. These recipes are family favourites that we look forward to making and sharing. Sometimes, it is nice to change things up a bit. This recipe for Chicken, Millet and Spinach Appetizers was developed because I was looking for a way to incorporate lean ground chicken into a lighter first course or appetizer. Millet was chosen as an ingredient in this recipe for several reasons – it binds well with the delicate texture of the ground chicken and it is also gluten-free and inexpensive. Millet is an ancient seed that one-third of the world uses in their diet because it is rich in iron, B vitamins and calcium.  The chlorophyll from the spinach and parsley tints the ground chicken mixture to a unique green colour. This makes the appetizers a colourful addition to the holiday season due to their garden-fresh appearance. Herb and Butter Sunday Roast Chicken

I have some great childhood food memories of Sunday dinners with my family around a large dining room table. The conversation was always lively and animated given our French Canadian heritage. The aromas drifting from the kitchen always made my stomach rumble in anticipation of the wholesome home cooking. Some of my favourite family dinners were Mom’s pot roast, roast leg of lamb or roast chicken, surrounded by potatoes and carrots from the garden which were always cooked in the same pot. All of these meals had one thing in common – they were prepared and placed into the oven with minimal fuss and roasted slowly. Fast-forward to today; a roast dinner is still my favourite meal on a lazy Sunday afternoon. I love planning the entire meal from the main dish to the dessert using the heat of the oven to cook several items at once. Our oven meal is often accompanied by local oven-roasted butternut squash, potatoes or Brussel sprouts. If you are the same as me, the big attraction is always the main course.  There is no doubt you will enjoy this recipe for Herb and Butter Sunday Roast Chicken, which has been adapted from a popular recipe.

Burgers can be made with any ground meat and can be seasoned to provide a unique flavouring. Even though it is fun creating your own favourite burger using ground beef, it is always interesting building a burger using ground poultry, which has a lighter taste and is more easily digested than an all-beef burger. Ground turkey is a good choice as it easily absorbs additional ingredients, which in turn allow it to make a flavourful burger. With that in mind, I have developed a recipe for Turkey Mushroom Jarlsberg Burger.

Egg rolls are an American Chinese appetizer that most everyone is acquainted with. They are typically filled with pork, cabbage and other vegetables, enclosed in a wheat wrapper and deep-fried. The filling on its own is a healthy low-carb option that is also gluten-free and dairy free. While the filling is typical of what you would find in any egg roll, mushrooms were added to the turkey meat, together with onions and garlic. This recipe for Pan Roasted Chicken Breast with Creamy Asiago Sauce has gone through a significant transformation over the years. It is interesting how favourite family recipes experience modifications as a result of ingredient costs, dietary restrictions or simply, a streamlining of the recipe.

When I read the original recipe provided by the meat department of a major grocery chain a number of years ago, I recall thinking that it would be a rich and indulgent dish for company only. I also noted the recipe used two large frying pans, and since my kitchen equipment was rather meagre at the time, I simplified the recipe so that it could be prepared in one pan.Chicken with Creamy Asiago sauce | urbnspice.com

The original recipe was named “Chicken Breasts with Blue Cheese Sauce”, which called for 550 g of Blue Cheese – that is a lot of Blue Cheese! Since our family was not really a huge fan of Blue Cheese, I modified the recipe to use Asiago Cheese. Asiago Cheese is similar in taste to Parmesan and can be easily melted. A small amount of flavourful Asiago cheese goes a long way. I created a delicious sauce with 120 g (2 cups grated) of Asiago cheese, which is a significant departure from the amount of cheese used and cost associated with the original recipe. Pan Roasted Duck Breasts with Orange Vanilla Glaze

The Inspiration of Urb’n’Spice Series

The concept for this recipe originated from a preserve that I have been making for many years.   Orange Vanilla Bean Confiture (a cross between a jam and marmalade) was developed at my work because we needed garnishes for a new menu item. The confiture was to accompany a caramelized rice crispy garnish, which was a topping on a classic baked rice pudding. The dessert was very delicious and extremely popular. The confiture became a favourite amongst the other chefs in the kitchen and made its way into a number of other dishes. One of my favourite ways that they used my preserve was on a glazed Duck Breast. The duck breast was served beautifully displayed with seasonal vegetables and puree of celeriac or other similar items. My approach for this Pan Roasted Duck Breasts with Orange Vanilla Glaze is more casual and the dish is served family style on a board or large platter. It is an easy-to-make dish that can be prepared in just a few minutes. The Un-Christmas Day Feast

Prelude: I am a proud Canadian. When the Culinary Historians of Canada (CHC) invited food bloggers to participate in the “CHC Canada 150 Food Blog Challenge”, I knew that I wanted in! What a great way to celebrate and honour Canada’s 150th birthday by featuring a different Canadian dish or discussing a topic which reflects on what it means to be Canadian. For December, the Culinary Historians are challenging bloggers to bring their best holiday game, with the most festive and delightful food tales about winter holidays past. I have a story about the origination of our family tradition, called Un-Christmas Day. As well, I will describe why the tradition was created and the special activity that always took place at the end of the day. Of course, food was involved, which is why I will be sharing a menu featuring a recipe for Dry Roasted Crispy Chicken Wings with Honey Garlic Dip. If you choose to embrace this holiday season finale, I think both you and your family will create some great memories.
