The Inspiration of Urbnspice

I have had so much fun in the past few weeks developing recipes for The Little Potato Company who have been working with Food Bloggers of Canada (FBC) to sponsor an opportunity for its FBC members to develop original recipes utilizing their unique potatoes. These little nugget potatoes were the inspiration for my Potato Crusted Quiche.

In developing these recipes, I had several favourites and this one in particular: Potato Crusted Quiche is just too good not to share with you. It is well worth trying. In addition, this recipe is a gluten-free option.  It is also for those of you who avoid making quiche (or pies and tarts, for that matter) because of the ‘dreaded pie crust dilemma’.  This Potato Crusted Quiche recipe is for you!

If your guest list this holiday season has you hesitant to face gluten-free or dairy-free restrictions, this gluten-free Sausage & Potato Stuffing is the perfect side dish for you. As it happens, my guest list this year includes gluten-free, dairy-free and grain free restrictions, so I can definitely relate.

Sausage and Potato Stuffing: Gluten Free, Dairy Free and Grain Free Stuffing

This is a no-fret recipe.   It has all of the traditional ingredients of a classic stuffing without the bread and includes aromatic vegetables, rich chicken stock, a splash or two of white wine, flavourful sausage and crispy bacon.  I can guarantee that after you taste this Potato “No Bread” Gluten Free Stuffing, you will want it to be part of your family holiday favourites.

Sausage & Potato Stuffing

Prep Time: 15 minutes

Cook Time: 15 minutes

Yield: 6 – 8 servings

CHEF TALK: This gluten-free, make-ahead dish, is sure to become one of your go-to side dishes. It is delicious served with a ham or turkey dinner or for any occasion.

INGREDIENTS:

  • 1 lb mixed nugget potatoes
  • 1/2 lb (226 g) of pork or breakfast sausage (I used gluten-free Bratwurst), removed from casings
  • 2 slices of bacon, diced
  • 1 medium onion, diced
  • 1 medium carrot, diced finely
  • 1 stalk celery, diced finely
  • 1/4 cup red bell pepper, diced finely
  • 2 cloves garlic, minced
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon dried summer savoury
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon ground black pepper or to taste
  • 1/4 cup white wine
  • 1 cup chicken stock

METHOD: 

Prepare the potatoes:
    1. Pierce the potatoes once or twice with a skewer and place them on a microwave-safe dish.
    2. Microwave for five minutes and remove from the microwave. Cool for a few minutes until they are easy to handle. (You can prepare these ahead).
    3. When the potatoes are cool enough to handle, quarter them or dice them into small pieces as shown in the photographs. Set aside.
For the Stuffing:
  1. In a large fry pan over medium heat, fry the sausage meat, breaking it up into small crumbles, until it is caramelized.
    CHEF TIP: This process of caramelizing adds flavour to the stuffing. Remove the cooked sausage meat from the frying pan and set aside.
  2. Now add the diced bacon to the same fry pan and cook the bacon until it is brown and crispy.
  3. Add the diced onion and stir together until the onion is starting to turn colour.
  4. Add the diced carrot, celery and bell pepper and stir until the vegetables are softened.
  5. Add the minced garlic and stir to cook for a minute or two.
  6. Add the herbs and season to taste with salt and pepper.
  7. Add the white wine and cook until the wine evaporates – about one minute.
  8. Return the sausage to the pan and stir in the cooked diced potatoes.
  9. Stir all of the ingredients together and then add the chicken stock.
  10. If you want to make this dish ahead, take the frying pan off of the heat and let it cool before you cover and refrigerate until you are ready to reheat at 325oF for 30 to 40 minutes.
  11. If you wish to serve this dish right away, simmer for a few minutes until the chicken stock is absorbed by the vegetables and potatoes. Check and adjust seasonings, if necessary.
  12. Keep the stuffing warm.
  13. Sprinkle with fresh parsley and serve.  Enjoy!

Smashed Potato Pizza

The UrbnSpice kitchen is a creative place and I love that. Sometimes, inspiration falls into my lap unexpectedly and then ideas and possibilities materialize so quickly that I cannot create fast enough. This is what happened when I was presented with an opportunity to develop recipes using nugget potatoes. So, how did the idea of a Smashed Potato Pizza come about?

Recipe development is definitely a large part of what I do as a chef, and many of the recipes that I develop for folks are for gluten-free dishes. One of the dishes that they tell me they miss the most is pizza. Now add to that another dietary restriction that indicates a grain free limitation – well, that gets a bit more complicated, doesn’t it? I took that challenge of finding a grain-free, gluten-free option that would not leave anyone sitting on the sidelines while everyone else was enjoying pizza. Thus, the recipe for Smashed Potato Pizza was born.

Families are busy, right?  I remember having the dilemma of trying to get two active daughters off to soccer practices six and sometimes even seven days a week after work or early on a Saturday morning.  Everything had to be quite well orchestrated in order to get the daily activities and weekly responsibilities accomplished.  That is when I created a repertoire of Double Duty Recipes.  Lemon Potatoes is the inspiration for this Double Duty Recipes Series.

Double Duty Recipes: Roasted Potato, Crispy Bacon & Chive Salad

With such a busy schedule, my challenge was to consider a recipe that could be used for two meals, (double duty) such as dinner the first night with a grilled steak or chicken breast, then planned leftovers for salad the next day.  The recipe that follows for Roasted Potato Salad with Crispy Bacon and Chives is a re-creation of the Lemon Potato recipe featured in this post – a favourite of my lemon-loving daughter.

You may want to consider doubling this recipe for Lemon Potatoes – just saying.  They are delicious.  And, addictive.  And, you will probably find that you don’t have enough left over for the double duty recipe.  This happens often!  I can tell you from past experience that our family of four would hover over the tray just hot from the oven after we drizzled the lemon juice on top of the crispy roasted potatoes and happily feast on them.

Lemon Potatoes

LEMON POTATOES

CHEF TALK:  Small nugget potatoes work well here.  This is a unique method of cooking (par-cooking) potatoes because you start with hot water and par-boil the potatoes for a few minutes before roasting them.  The secret is high heat for a short period of time in the oven – the light coating of flour and seasonings creates a nice crust.  Drizzle fresh lemon juice over the potatoes immediately as the tray comes out of the oven. The potatoes absorb the fresh lemon juice, lending great flavour to this hot dish.  This recipe can easily be made gluten-free by substituting the flour with a gluten-free blend.

INGREDIENTS:

  • 1  1/2 lbs.  (usually 1 bag) small nugget potatoes, halved or 1 1/2 lbs. large russet potatoes, cut into 8 pieces
  • 1 – 2 Tablespoons all-purpose flour or gluten-free flour blend
  • 2 – 3 tablespoons butter or olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon onion powder
  • 1/2 of a cooking onion, diced
  • Juice of one half of a lemon (about 2 tablespoons)
  • Zest of 1/2 lemon, if desired

METHOD:

  1. Preheat oven to 400°F (200°C).
  2. Line a rimmed baking sheet with parchment paper.  Set aside.
  3. Set a medium to large pot of water to boil.  Add the potatoes.
  4. Par-boil for five minutes – the potatoes will not be cooked through at this point. Drain.  Remove the potatoes to a stainless steel bowl.
  5. Add the butter, flour, seasonings and diced onion.  Toss well. Place on the baking sheet.
  6. Bake for 15 to 20 minutes without turning (the small nugget potatoes will be nicely coloured with darker caramelized tips). If you are using the larger potatoes, roast for 30 – 40 minutes until the edges of the potatoes are golden with caramelized tips.
  7. Remove from the oven and drizzle the lemon juice over the potatoes (and zest if you are using).  Toss to combine.  Adjust seasoning if necessary.  Enjoy while they are hot or cool the potatoes in order to make the following recipe.

WHAT ELSE CAN I DO WITH THIS RECIPE?

CHEF TALK:  Those of you who follow my cookbooks know that I often take a recipe and give you options for reinvention.  This is a perfect example of a Double Duty Recipe.

I am fairly certain that once you make this version of potato salad, it will be a part of your salad repertoire for many occasions.  It is rustic with its chunky ingredients, very flavourful and guaranteed to be a hit. Give it a try.

DOUBLE DUTY RECIPE SERIES

Roasted Potato Salad with Crispy Bacon and Chives

INGREDIENTS:

  • 1 1/2 lb roasted LEMON POTATOES, (leftovers from doubled recipe above)
  • 1/3 cup mayonnaise
  • 3 – 4 eggs, hard-boiled, each egg cut into quarters or eighths
  • 1 scallion, sliced thinly
  • 4 – 6 rashers of smoky bacon, cooked until crispy and broken into coarse pieces
  • 1 – 2 dill pickles, depending on size, 1/4 inch dice
  • Chives, for garnish
  • Salt and Pepper, to taste, as required

METHOD:

  1. Simply combine the above ingredients, first reserving a little of the bacon, egg and scallion for garnish.
  2. Taste for seasoning (it often does not require any).
  3. Garnish with reserved bacon, egg and scallion and chives.
  4. Serve immediately or keep refrigerated until it is time to serve.  Refrigerate any leftovers.

OTHER DOUBLE DUTY STRATEGIES FOR THIS RECIPE:        

CHEF TIP # 1:  Time Saver: Use the time that your water is coming to a boil to hard boil the eggs.  By the time the water comes to a boil, it will be time to remove the eggs with some of the boiling water and let them sit for 10 minutes before plunging them in cold water to cool.  Crack the shells by tapping them all over, but do not peel. Keep them in the cold water. After 10 minutes has passed, shell the eggs – you will find that this is now an easy task.  Store the peeled whole eggs in a container filled with fresh water in the refrigerator for up to three days.

CHEF TIP # 2:  Time Saver: On a parchment lined baking sheet, roast one entire package of bacon in the oven.  Just separate the rashers of bacon and lay them flat close to each other.  Roast at 350°F until desired crispness. Use 4 – 6 rashers of bacon for the salad and store the extra bacon for a quick lettuce, bacon and tomato sandwich or to sprinkle on salads, etc.  (You can freeze cooked bacon, too).  Remove the bacon to a paper towel-lined saucer.

CHEF TIP # 3:  Bonus Flavour Booster:  Remove any excess bacon fat from the tray that you are roasting the bacon on but leave the stuck-on bacon bits that remain on the parchment on the sheet – use this same baking sheet to roast your lemon potatoes for a bit of added bonus bacon flavour (again – double duty!).

Making comfort food is therapeutic during winter’s last blasts.  I always encourage fun in the kitchen so let me tell you why I set about making a playful batch of purple gnocchi one day:

It has been very blustery on the Island where we live.  It makes me shiver to look outside.  My usual pattern of walking has been curtailed by periods of rain, wind, snow and sleet.  While I am well equipped with Paddington Bear rain gear, there is definitely a small voice coaxing me to stay inside where it is warm and cosy.

During a sunny break amidst the storm clouds yesterday, we overcame the elements to stock up on groceries.  My eye caught a display of purple potatoes which became my inspiration of the day.

The Challenges of Cooking for a Rock Star

I love my daughter to pieces – one might say that I am seriously addicted to her. When she first started to experience the challenges of having to adopt a completely gluten-free, grain-free diet, I welcomed her challenges of cooking as mine.  We called it the summer of Gluten for Punishment.

We spent the better part of her summer holiday experimenting with recipes that she could easily reproduce at home and would be able to tolerate with her dietary restriction challenges.  It was a challenging time for her, as well, trying to adapt to approaching food in an entirely different way so that her body would not punish her in the end with discomfort and reactions.

As a chef, I found this to be an exceptional challenge due to labelling inadequacies and a lack of viable recipes to build upon at the time.  As her Mom, I felt empathy towards her as she experienced difficulties when invited to dinner or on restaurant outings. She wrote    “Gluten Free Rock Star”  which discusses, from her point of view, some of the anguish and perceived punishment that she and others like her, face on a daily basis.   As a chef and her Mom, I was inspired and determined to pursue the task of making her life just a little bit easier by providing nutritious and delicious recipe options – she was growing weary of salads!

I am happy that we were able to create a few dishes that have worked for her.  We have also experienced a few pleasant surprises in the process.  For example, when creating a recipe for a gluten-free veggie burger, I rehydrated and pureed vegetable flakes to use as a binder for the burger mixture rather than using breadcrumbs. The complex flavour that this technique introduced into the mixture was wonderful and provided a much-improved texture when compared to the typically utilized bread crumbs.  We have been using this technique ever since.   Furthermore, we have adopted this technique with our meatloaves, regular hamburgers, and meatballs.

We sure have come a long way since that initial cooking spree that my daughter and I shared that summer.  There are so many products available now that make the choices for gluten free and grain free dietary restrictive shoppers so much easier.

Try making my recipe for Rock Star Veggie Burgers whether or not you are restricted to a gluten-free diet.   They are delicious, flavorful, wholesome and healthy. The Challenges of Cooking for a Rock Star

There are many things to consider when cooking for someone with dietary restrictions or food intolerances.

  1. Expect that some experiments will be successful and others that may prove to be disastrous!
  2. Expect that some experiments may not be tolerated despite the fact that ingredients used were on the “okay” list.
  3. Expect that some unique ingredients may be difficult to source in some areas.
  4. One thing that will become readily apparent is label reading. There are many hidden sources of food intolerant ingredients and one must be ever vigilant in the “learn and determine” stages of sourcing, buying and preparing food for anyone with food restrictions (allergies) or intolerances.

There are many books now available that focus entirely on eating gluten free and grain free.  Many of these books are written by someone who has personally had to either cook for someone with dietary restrictions or they themselves have had to adopt this way of eating.  They also understand the challenges faced by their patients, clients, family and friends.   They are also passionate about providing clear and concise information and recipes to help those needing to adopt a similar dietary lifestyle.

The challenges of cooking or baking gluten-free does not have to be a punishment.  With so many people adopting a gluten-free lifestyle, it is a dietary challenge that many of us will encounter in one way or another.  Think of it as your life’s next learning adventure.  You, too, will become a gluten-free rock star.

Living your life Gluten-Free, whether by design or by requirement, forces you to become the most demanding person alive (aside from other Gluten-Free harridans) when eating a meal away from home.

Whenever I make dinner plans, I am immediately perceived as a mix between the infamous character Sally in the film “When Harry Met Sally” and a slightly deranged Rock Star who has a list of requirements to play at your stadium. Except that instead of a stadium, I am in your kitchen, and instead of a film,  it is real life.

I dread going out for dinner or being invited to a friend’s house because I show up with a list of demands longer than the intended menu. First, I can’t have anything with ANY grains or gluten. Secondly, I can’t have anything that THINKS its a grain. Next, I want to check each-and-every ingredient you are cooking with to make sure it is not bound to any sort of gluten or grain-type product. Anything that quacks like a grain probably is one and will send me into fits of reaction for days on end. If you don’t have a completely gluten and grain-free kitchen, I will have nothing at all. Oh, and don’t forget, I want you to pick all of the BLUE M&M’s out of the candy jar (not red, just blue), put them on a silver platter and sing falsetto while balancing on your head juggling pickle jars.

Sometimes I think juggling is easier than cooking an entire meal to accommodate one measly little person. What right do I have, I think to myself, to make such impossible demands on people? I am often asked by a nervous dinner host how they could possibly know if they have made a truly gluten-free/grain-free dinner. I have gotten out of the habit of answering in a comedic tone as that does not seem to go over well and respond by simply saying: “A salad will be fine. In fact, I can even bring my own.”

My Mom’s French Canadian Tourtière

CHC CANADA 150 FOOD BLOG CHALLENGE SERIES

Prelude:  I am a proud Canadian. When the Culinary Historians of Canada invited food bloggers to participate in the “CHC Canada 150 Food Blog Challenge”, I knew that I wanted in! What a great way to celebrate and honour Canada’s 150th birthday by featuring a different Canadian dish or discussing a topic which reflects on what it means to be Canadian.  For the month of May, in honour of Mother’s Day (May 14), CHC invited food bloggers to share recipes relating to mothers, recipes and techniques passed on by our mothers or grandmothers, or from our mother’s culture. I am honoured and proud to share a historical and famous recipe for My Mom’s French Canadian Tourtière.

Food has been such a significant part of my French Canadian heritage and some of my clearest childhood recollections are about food.   It is not only the memories of the food that are so clear but the smells, the tastes and the surroundings that are so vivid.  Holidays would not be the same without Mom’s tourtiere.  In our family, the Christmas Eve menu always included a large tourtiere to enjoy before midnight mass.

There are a number of food traditions that are very important to my family, but my Mom’s famous tourtière is the most requested.  I have had many versions of tourtière – from chefs colleagues, relatives and friends, but none can compare to my “Little Mom’s” French Canadian Tourtière. (More on “Little Mom”).

My Mom’s version of tourtière is more savoury than traditionally prepared tourtière due to the use of sage and poultry seasoning as opposed to the warm spices typically used (cinnamon, cloves, nutmeg and allspice).  Mom always insisted on a mixture of ground meat: beef, veal and pork. This combination makes a huge difference in the overall taste and texture of the tourtière filling. The aromatic fragrance of the tourtière mixture simmering is magical.  Writing about it makes me nostalgic.  Although I have adapted the process somewhat, I follow her recipe method and always make enough to share with family and friends, which was her tradition.

My Mom’s French Canadian Tourtière became quite famous in a small village in Ontario.  Everyone loved it when she made her tourtière pies for church or village social events.  As a matter of fact, the ladies of the village church approached her many years ago for her tourtière recipe to make and sell the pies for the parish fundraising efforts.  She not only generously shared her tourtière recipe – she also taught them how to make it….
