There are many reasons why I am writing a post on Gluten-Free Tips and Techniques.  We all have gatherings of every kind: from book clubs to cookie exchanges, birthday celebrations to holiday open houses and seasonal events. One of the questions I am often asked is “what can I make my gluten intolerant or gluten sensitive guests”?

This is a question that sometimes makes dinner hosts and event organizers very nervous. This article will focus briefly on some tips and techniques that I have developed during my culinary career regarding gluten-free products and recipes.

Gluten Free Pate Brisee

As a pastry chef, Pâte Brisée became one my favourite go-to pastry recipe because of its buttery, flaky texture.  I use this pastry to make all types of pies and tarts. This pastry adapts well to gluten-free, hence my sharing of this Gluten-Free Pate Brisee. You can prepare this pastry using an electric mixer, or by hand using a pastry cutter.  One of the benefits of making this pastry is that you can use it right away – not the usual case for typical pastry doughs because most need to be refrigerated before you can use them. You will find that the results are excellent as the pastry holds up and browns well in the oven, which is commonly an issue with many gluten-free pastries.

Cherries are in season in the Okanagan and there are so many ways to enjoy them. I could only eat so many raw cherries, and I needed to expand my repertoire of ways how to use these beautiful cherries. With that in mind, I have been playing with recipes for cherry compote, cherry cordial, cherry Danish and the featured recipe, Dark Cherry Vanilla Dairy-Free Ice (Nice) Cream.

Dark Cherry Vanilla Dairy-Free Ice (Nice) Cream and Dark Cherry Vanilla Compote

There are members of my family who are dairy intolerant; so I developed my own version of a dairy-free dark cherry ice cream.   One option is to use coconut milk for a dairy free alternative because it provides the same texture and creamy mouthfeel that an ice cream base made with cream would provide. Full Fat Coconut milk is quite expensive when compared to the cream that is used in regular ice cream. Therefore, for a number of reasons, I have used bananas to supplement the base mixture. Bananas add flavour and a natural sweetness to the base and are a more economical way to make dairy-free ice cream rather than using only coconut milk.

Dark Cherry Vanilla Dairy-Free Ice (Nice) Cream

It is interesting to note that when bananas are utilized as a major ingredient in dairy-free ice cream, it is called “Nice Cream.” The term ‘Nice Cream’ has become a common culinary term. “Nice Cream” is defined by the process of puréeing or blending chunks of frozen bananas into a soft style ice cream. While I enjoy the smoothness of this frozen dessert, it does not hold up well when you serve it. The addition of coconut milk creates a much more stable velvety texture with a delicious creamy flavour. When chopped dark cherries are added, this dairy-free frozen treat is taken to a new level. I have included almond extract in the ingredients because it pairs so well with cherries (omit for nut allergies).

There is one ingredient that you might not expect in this dairy-free ice cream and that is gelatine powder. Gelatine helps with the texture of this dairy-free ice cream, which can often be as hard as a puck due to the lack of fat and sugar. CHEF’S NOTE: Granulated sugar is often used in ice cream recipes because it does not freeze and keeps the ice cream from over crystalizing. You can use any type of sugar (granulated, liquid sugar such as maple syrup, honey, etc.). Sugar unquestionably gives the ice cream a more familiar texture. As Julia Child said, “Everything in moderation – including moderation.” It is really all about balance in everything that you eat. As frozen desserts go, a small portion of this ice cream treat is a healthier and enjoyable dairy-free option. Dark Cherry Vanilla Dairy-Free Ice (Nice) Cream is also gluten-free, egg-free, refined sugar-free and nut-free (if you omit the almond extract).

Typically, I will have lots of cherries left over, so I also want to share with you a recipe on how to make a delicious Dark Cherry & Vanilla Compote that is ready in less than five minutes. Dollop a spoonful of this compote on top of a serving of Dark Cherry Vanilla Dairy-Free Ice (Nice) Cream and you will have your guests and family coming back for seconds as this delicious compote goes so well with the Nice Cream….

Whole Grain Gluten-Free Dairy-Free Mini Muffins

What do you do when you have to bake for a young child who is unable to tolerate wheat or dairy? You can bake these delicious 8-grain or 4-grain mini muffins. This recipe for Whole Grain Gluten-Free Dairy-Free Mini Muffins uses a wheat-free hot cereal as a base. The cereal is soaked in non-dairy milk for 10-30 minutes before you add the remaining ingredients. The mini muffins have a wonderful crunchiness that is very pleasing. I have used either of Bob’s Red Mill 8-Grain Hot Cereal, or Mighty Tasty Hot Cereal (4 wheat-free grains) and both provide a very good result.

I am a proud Canadian. When the Culinary Historians of Canada invited food bloggers to participate in the “CHC Canada 150 Food Blog Challenge”, I knew that I wanted in! What a great way to celebrate and honour Canada’s 150th birthday by featuring a different Canadian dish or discussing a topic which reflects on what it means to be Canadian.  For the month of June, CHC invited food bloggers to share stories and recipes that relate to farmers’ markets, farm-gate stands, dockside fish purchases and other examples of purchasing food directly from the source.  Vegetable Tian is my Farmer’s Market inspiration.

Vegetable Tian using tomato, zucchini and eggplant

Some of my best food memories from my childhood were close to home in our market size vegetable garden. Every day, we would grab our shallow oblong basket called a trug and carry it to the backyard to pick fresh carrots, potatoes, tomatoes, lettuces or whatever was ripe at the time.  Eating fresh-picked produce is a true pleasure to your taste buds.

I live in a produce paradise called the Okanagan Valley where Farmer’s Markets and wineries abound.  For example, when I go to the farmer’s market or the roadside stands, the Sweet Strawberry Tomatoes, or the Savoy Cabbage is always irresistible. The vibrant colours and a wide variety of seasonal vegetables can represent that day’s inspiration. I enjoy making a Vegetable Tian with fresh young zucchini, tomato and eggplant.  A tian (le tian) is a type of gratin dish. It is made by thinly slicing vegetables and layering them in a shallow earthenware dish and slow-baked until the vegetables are tender and flavourful.  The hidden bottom layer of the tian is caramelized onion, which not only provides amazing flavour to the dish but also a stable foundation on which to lay and shingle the sliced vegetables.

Chocolate Cherry Almond Torte – Gluten Free, Grain Free, Refined Sugar Free

Chocolate possesses a number of interesting technical properties not dissimilar from wine. The region, the surrounding vegetation and the soil are some of the key factors in the character of the cocoa bean and the overall taste of the chocolate. The origin of the Chocolate Cherry Almond Torte recipe is not clear but what is clear is that the quality of the chocolate significantly influences the result. For the purposes of this article, I have taken the vintage Chocolate Cherry Almond Torte recipe and re-developed it so that it is suitable for gluten-free, refined sugar-free and grain-free dietary options.  It is a great make-ahead cake and one that will feed a crowd.

The Inspiration of Urbnspice Series

The Ultimate Sunflower Butter Breakfast Bars – Gluten Free, Dairy Free, Nut Free, Egg Free, & Refined Sugar Free

The very reason that these Ultimate Sunflower Butter Breakfast Bars were created was due entirely to another recipe I was updating for Nut Butter and No-Nut Butter Cookies. I had been experiment making Sunflower Seed Butter – let’s just say that resulted in an interesting reaction. You can read my Funny Sunflower seed butter story in this post.

The moral of the story is: good things happen to those who are determined. White Chocolate Vanilla Bean Mini Cheesecakes with Gluten Free Crust

I love cheesecake! Just about everyone in my circle of family and friends will answer “cheesecake” when asked what their favourite dessert is.  I like to make sure that no one is left out due to dietary restrictions, so I developed this recipe for White Chocolate Vanilla Bean Mini Cheesecakes with a Gluten Free Crust. Even the folks that could eat foods with gluten loved this cheesecake.

Although this delicious white chocolate cheesecake recipe will feed a crowd (9-inch springform pan), I prefer to divide the cheesecake custard to make mini cheesecakes (18 – 24 mini cheesecakes). The crust I created for this particular cheesecake is a gluten-free rice flour crust that is pre-baked for just a few minutes before the cheesecake custard is poured in.

For these dainty little cheesecakes, a simple garnish is all that is required. Top each mini cheesecake with a quarter wedge of strawberry or other perfect berry and you will have an impressive dessert for a buffet or dessert tray. Bonus Technique:  I have included a simple technique to make your own white chocolate garnishes as pictured in the photographs below.  I hope you will enjoy trying these White Chocolate Vanilla Bean Mini Cheesecakes.
